Banana Muffins

Ingredients

  • homemade flour: 250g

  • baking powder: 1

  • soda bicarbonate: ½ tsp

  • caster sugar : 110 g

  • butter, melted: 75g

  • spoon of vanilla extract: 1 tsp

  • eggs: 2

  • large ripe bananas: 2

  • butter (or add 1 teaspoon of lemon juice to milk and leave for 20 minutes): 125ml


STEP 1

Preheat the oven to 190C / 170C Fan / gas 5. Fill a 12-hole muffin tin with paper bags. Combine flour, baking powder, bicarbonate of soda and caster sugar with a pinch of salt. In a separate bowl, combine melted butter, vanilla extract, eggs, chopped bananas and buttermilk.


STEP 2

Make a well between the dry ingredients and pour the wet ingredients in the middle. Mix almost with a fork, being careful not to mix too much. Sprinkle with chopped pecans, if used, and toss the mixture into the sides of the muffin and bake for 20-25 minutes, until golden brown. Cool on a wire rack.
