Neapolitan Pizza

Ingredients:

  • bread flour : 250 g

  • water : 150 ml

  • salt : 6g

  • fresh yeast : 1.5 g

  • extra olive oil (required amount)

  • crushed tomatoes : 200 g

  • mozzarella : 125 g

  • fresh basil (to taste)

  • salt and oregano (to taste)

Dough preparation:

Step1

Put a little water in a bowl and set aside some.

Step2

Describe the yeast in the first bowl.

Step3

Pour the flour into a large bowl and add the melted yeast to the water. Stir to join.

Step4

Take a bowl with the water you saved in the first step and sprinkle 12 grams of salt there.

Step5

Add salt water to the yeast flour. Mix with a wooden spoon.

Step6

Once you have found the sticky dough, it is time to use your hands. Put your hands together to form a ball.

Step7

Put the flour on the table and start mixing. You will need to stir for a while until all the ingredients are well combined. Neapolitan pizza makers insist that the dough should be "beaten" to achieve the desired texture.

Step8

Once you have won the uniform, place the dough in a bowl, cover it with a cloth and allow it to rise for a day. During this break, the dough will triple in size.

Step9

After the break, roll the table flour again and place the dough in there.

Step10

Divide the dough into two equal parts. Arrange each part in a bowl, cover it with a cloth and let it rise for an hour.


Preparing pizza condiments:


Step1

Place the chopped tomatoes in a bowl and add two tablespoons of olive oil. Combine.

Step2

Add oregano and season to taste.


Preparing Pizza

Step1

After the last break, take the dough and roll it in a flour table, giving it a round shape. If you do not have a circular mold, you can make it square or rectangular. Try not to use too much dough to avoid losing breath.

Step2

Preheat oven to 250 degrees.

Step3

Put the mold you will use for pizza inside. A real Neapolitan style pizza is cooked in a wood-burning oven but if, like most people, you are not at home, use the oven and it will still look good. If you have one, you can use pizza stone to give it a lower crunchier texture.

Step4

Sprinkle the pizza with two tablespoons of sauce.

Paint the pizza peel with olive oil to prevent the dough from sticking and with its help, place the pizza in the oven. If you do not have a pizza peel, you can place the pizza directly in a hot pan.

Step5

Cook the dough for about 8 minutes.

Step6

Remove from the oven and add the mozzarella.

Step7

Return the pizza to the oven to finish cooking for another 10-12 minutes.

Step8

Sprinkle with basil leaves.
